Southwest Spaghetti Squash

Ingredients:
1 spaghetti squash
Olives (1 can whole olives)
1 cup of corn
A green pepper
An onion
Can of black beans (rinsed)
8 oz. Can of green chilies
Mushrooms
Olive oil
Cilantro

Salt
Pepper
Smoked paprika
Cumin
Cayenne
Chili powder

Instructions:
Preheat oven to 400 degrees.
Cut squash in half and remove the seeds.
Brush a thin layer of olive oil on the inside of the squash.
Season the inside of the squash with salt and pepper.


When oven is preheated put squash halves face down onto a baking sheet. You may want to spray the sheet with non stick spray.

Bake at 400 degrees for 40 min.

Meanwhile…
Chop onion, green pepper, olives and cilantro.
In a large pan, saute onions.
Add all ingredients into the pan. Season and wait for squash to be done.


Once squash is cooked, remove guts and mix into pan with other ingredients.
Serve in squash skins or on a plate!


Garnish with chopped cilantro and eat.

You may want to add boco crumbles or ground beef as you see fit.
